Chicken - Skinless, boneless chicken thighs, or any other kind
1 can diced tomatoes
1/2 of a cabbage
1 teaspoon turmeric, or more if you like!
cilantro and green onions to garnish
Dice onion and sauté in pan on medium-high heat to soften onions.
When they start to look shiny add the chicken. Add the turmeric and sauté for an additional minute. Add the chicken, and cook until the outside of the chicken is done. Add can of tomatoes and chicken stock. Bring to boil, then reduce the heat to low. Simmer for 20minutes. Simmer for longer for it to get more tasty
While it's simmering, cut cabbage into thin strips and put them in a bowl. Add more than you think because they will wilt with the hot stew.
Ladle stew over the shredded cabbage. Stir in lime juice to taste (1/4-1 lime or 1/2 TBS lime juice) and garnish with chopped cilantro and green onion.
